Basque Christmas Cheesecake
- 175 g Sugar
- 3 Eggs
- 20 g Plain Flour
- 500 g Emborg European Cream Cheese (room temperature)
- 1 tsp Vanilla Extract
- 240 ml Emborg Whipping Cream
Basque Christmas Cheesecake is a delicious and velvety smooth baked cheesecake perfect for enjoying during the holidays. Try it – we promise you won't regret it!
Preheat oven to 210°C.
Prepare a 7 x 18 cm cake tin and grease it with Emborg butter. Then press down a big piece of baking paper firmly into the tin, so it covers the whole tin including the sides.
Taking a second piece of baking paper, add another layer on top of the first.
Mix Emborg cream cheese and sugar until creamy and soft. Add in the eggs one at a time and then the vanilla.
Sift the plain flour into a separate bowl. Whisk the Emborg whipping cream into the flour, little by little.
Add in the remaining cream and whisk until smooth. Add this mixture to the cream cheese mix and combine.
Pour the cheesecake batter into the cake tin and bake for 30 minutes until dark.
If the cake does not colour, change the oven setting to grill. Grill it for a couple of minutes until it is dark brown.
Allow it to cool on the countertop for about 1 hour, and then chill it in the refrigerator.
