Christmas Banana Cake
- 110 g Emborg Unsalted Butter
- 120 g Castor Sugar
- Pinch of Salt
- 2 Eggs
- 200 g Plain Flour
- 1 tsp Baking Soda
- 200 g Over-ripe Bananas
- ½ tsp Vanilla Extract
- 120 ml Emborg Yogurt
Banana cake is a true family favourite, perfect for many occasions. And what better occasion than Christmas? Try our easy and very moist Christmas-inspired banana cake by following these easy steps.
Heat oven to 175°C and grease an 18 cm round cake tin.
Sift plain flour and baking soda together. Set aside.
Mix Emborg Butter, sugar, salt, and vanilla extract until light and fluffy. Scrape down the bowl once, to incorporate fully. Add one egg at a time, beating well each time.
Add yogurt. Mix to combine thoroughly. Then add the dry ingredients and the cranberries, in two stages. Mix until even, scraping the bowl down.
Mash the bananas coarsely. Add them into the mix, right at the end, folding with a rubber spatula.
Pour into greased cake tin. Bake for around 45 minutes or until cooked through.

Decorate the cake with Emborg Whipped Cream, and add dried cranberries and walnuts on top.
