Stuffed sweet pepper

Ingredients
•    100 g Emborg Cheddar
•    150 g chicken, chopped
•    3 ripe tomatoes
•    4 sweet peppers
•    1 onion 
•    Fresh basil, chopped
•    Salt, pepper

 

Set the oven at 200ºC. 
Cut the peppers in two and remove the seeds. Place in oven tray and bake for 10 min.
Chop the onion and fry in a pan with oil. Chop the chicken and fry with the onion. Chop the tomatoes and add to the pan. Season with salt, pepper and chopped basil.
Fill peppers with the chicken filling. Sprinkle with shredded cheddar and bake for another
10 min. until the cheddar is melted and beautifully golden.
