

Corned Beef & Cheese Sandwich

Instructions

Heat oil in a pan over medium heat and sauté garlic and onions until fragrant and translucent.

Add corned beef and sauté for 3-5 minutes, until most of the liquid is cooked.

In another pan, fry the eggs sunny-side up. Season with salt and pepper to taste and set aside.

Layer some mayonnaise, a generous scoop of sauteed corned beef and add one egg per sandwich.

Grill or toast the assembled sandwich in a pan over medium-low heat for 2-3 minutes per side, or until the cheese is melted and the bread is golden brown.
