

Veggie Pancakes
Filled with veggie goodness, wonderfully crisp on the outside, chewy on the inside and easy to make, these veggie pancakes tick all the boxes!

Instructions

In a bowl, mix together the flour, rice flour, salt and pepper. Slowly pour in the water and mix gently until smooth. Fold in the garlic and mixed vegetables.

In a pan with hot oil, add the batter and cook over a low heat for 1.5 minutes per side. Turn the heat up to high then cook for 30 seconds on each side until golden brown.

Make the sauce by mixing the ingredients together. Set aside.
 - 
Cut the pancake into squares and serve with the sauce.
