Avocado Shrimp Salad
A light and refreshing salad with juicy shrimp, creamy avocado, fresh greens, and avocado mayo dressing. Crisp, creamy, and perfectly balanced for a fresh creamy seafoody bite.

Instructions

Lightly thaw Emborg frozen avocado. Cut into cubes.
Drizzle with lime juice to prevent browning and set aside.

Blanch shrimp in a pot of boiling water for 2–3 minutes.
Remove and let it cool.

Mash avocado in a small bowl until smooth. Set aside.

In another bowl, combine mashed avocado, mayonnaise, salt and white pepper together. Whisk until well blended.

In a large bowl, mix in together the shrimps, celery, cilantro, shallots, lettuce and avocado cubes.

Pour in the dressing and toss evenly. Drizzle with lime juice and serve.
