Cauliflower Mac & Cheese
- 1.9 l frozen Emborg Cauliflower Rice
- 2 tsp Olive Oil
- 3 tbsp Flour
- 5 dl Emborg Milk
- 200 g Emborg Shredded Red Cheddar
- 1/2 tsp Salt and Pepper
- 1 tbsp Emborg Butter unsalted
- 1 Onion minced
This low carb Cauliflower “Mac” & Cheese is something you do not want to miss! It’s the perfect comfort food for the whole family, as it combines the delicious cheddar creaminess with the great texture and nutrition from the cauliflower.
Preheat the oven to 200°C.
Heat Emborg Butter and oil in a large pan over medium heat. Add onions and cook about 2 minutes.
Stir in flour. Reduce heat to low and cook, stirring continually for 3–4 minutes.
Add Emborg Milk and continue whisking, raising heat to medium-high for about 2 minutes until it comes to a boil and becomes smooth and thick. Keep stirring and season with salt and pepper.
Once it becomes thick, remove pan from the heat. Add Emborg Shredded Red Cheddar a little bit at a time mixing well until cheese is all melted.
Thaw Emborg Cauliflower Rice and squeeze out excess moisture.
Stir cauliflower rice into the cheese mixture and pour into a baking dish.
Bake in the oven for about 15–20 minutes until bubbly and golden. Then broil for 2 minutes until the top is slightly browned.
Serve this hot, creamy delight with your favourite greens, such as Emborg Garden Peas, for a fresh touch.
