In a large bowl, combine the rice noodle strips with the beaten egg, cornstarch, Emborg Shredded Mozzarella, and a small pinch of salt.

Heat a non-stick pan over medium to low heat. Add just enough butter to lightly coat the bottom (do not deep-fry).

Press the noodle mixture into the pan in an even layer (not too thick). Pan-fry until golden and crispy on both sides. Do not over-fry, as the cheese may burn and the noodles can become tough.

Remove and drain on paper towels. Let cool slightly, then cut into squares (about 5 × 5 cm) or triangles.

Marinate the beef with soy sauce, oyster sauce, salt, sugar, pepper, and 1 tsp oil. Leave to marinate for 15 minutes.

Heat a pan or wok over high heat. Add 1 tsp oil and sauté the garlic until fragrant. Add the beef and stir-fry quickly until just browned.

Add the onions and bell peppers. Stir-fry for 1–2 minutes, keeping them lightly crunchy.

Arrange the crispy noodle pieces on a serving plate.

Spoon the stir-fried beef and vegetables over the top, then garnish with chopped scallions and coriander.

Serve with fresh herbs, lettuce, or pickled vegetables on the side, if desired.
For an indulgent touch, sprinkle a little extra Emborg Mozzarella on top of the hot beef so it melts slightly before serving.
