    Prepare the rice noodles

    • In a large bowl, combine the rice noodle strips with the beaten egg, cornstarch, Emborg Shredded Mozzarella, and a small pinch of salt.

    • Heat a non-stick pan over medium to low heat. Add just enough butter to lightly coat the bottom (do not deep-fry).

    • Press the noodle mixture into the pan in an even layer (not too thick). Pan-fry until golden and crispy on both sides. Do not over-fry, as the cheese may burn and the noodles can become tough.

    • Remove and drain on paper towels. Let cool slightly, then cut into squares (about 5 × 5 cm) or triangles.

    Stir-fry the beef

    • Marinate the beef with soy sauce, oyster sauce, salt, sugar, pepper, and 1 tsp oil. Leave to marinate for 15 minutes.

    • Heat a pan or wok over high heat. Add 1 tsp oil and sauté the garlic until fragrant. Add the beef and stir-fry quickly until just browned.

    • Add the onions and bell peppers. Stir-fry for 1–2 minutes, keeping them lightly crunchy.

    Assemble and serve

    • Arrange the crispy noodle pieces on a serving plate.

    • Spoon the stir-fried beef and vegetables over the top, then garnish with chopped scallions and coriander.

    • Serve with fresh herbs, lettuce, or pickled vegetables on the side, if desired.

    For an indulgent touch, sprinkle a little extra Emborg Mozzarella on top of the hot beef so it melts slightly before serving.
