Cheesy Potatoes Gratin

A classic French favourite, this Cheesy Potato Gratin features tender potato slices baked in a rich cream sauce with melted cheese until golden and bubbling. Make it for the ultimate comfort dish for family meals and special occasions.

    Instructions

    • Preheat oven to 200C. Butter the baking dish.

    • Slice potatoes 3mm on a mandoline. Check thickness with calipers after slicing - aim for a consistent 3mm across the batch.

    • Mix the two cheeses, set one third aside.

    • Stir cream, garlic, thyme, salt and pepper into the remaining cheese. Use a spatula to mix well.

    • On the tray, layout the potato slices and pour the cream mixture on top.

    • Stack the slices and stand them upright in the dish, packed tight, working from the edge inward.

    • Cover with foil, bake 30 min.

    • Scatter the reserved cheese, bake a final ~30 min until deep golden and knife tender.

    • Rest 5-10 min before serving.
