Easy Banana Cake
- 110 g Emborg Unsalted Butter
- 120 g Castor Sugar
- Pinch of Salt
- 2 Eggs
- 200 g Plain Flour
- 1 tsp Baking Soda
- 200 g Overripe Banana
- ½ tsp Vanilla Extract
- 120 ml Emborg Yoghurt
Banana Cake is a true family favorite and perfect for many occasions! The Banana Cake is super easy to make and very moist!
Preheat oven to 175 degrees celsius and grease a 7” / 18 cm round cake tin.
Sift plain flour and baking soda together and set aside.
Mix Emborg butter, sugar, salt and vanilla extract together until light and fluffy. Scrape down the bowl, once to incorporate fully. Add in 1 egg at a time, beating well, in between each addition.
Then add in yoghurt and mix to combine thoroughly. Then add in the dry ingredients in 2 additions, and mix until even, scraping the bowl down.
Mash the bananas coarsely, and then add this into the mix, right at the end, folding with a rubber spatula.
Pour into greased cake tin and bake for around 45 minutes or until cooked through.
