Easy Vanilla Layered Cake
An easy vanilla layered cake with mixed berries, perfect for any occasion!

Instructions

Preheat the oven to 175°C and prepare three 23 cm pans, lining them with round parchment paper or brushing them with oil.

Whisk together the flour, baking powder, baking soda, and salt; set aside.

In a stand mixer, beat the Emborg Unsalted Butter and sugar together until smooth and creamy. Scrape down the sides of the bowl with a spatula.

Add the eggs, vanilla extract, juice of half a lemon, Emborg Milk, and yogurt. Continue mixing until fully incorporated.

Slowly add the dry ingredients and continue mixing until no visible lumps remain.

Divide the batter evenly and pour it into the prepared baking pans.

Bake in the preheated oven for 25 minutes, or until a toothpick inserted in the center comes out clean.

Remove the cakes from the oven and let them cool for 10 minutes in the pans. Then, transfer them to a cooling rack to cool completely.

Meanwhile, whip the Emborg Whipping Cream until stiff peaks form. Transfer it to a piping bag and chill until ready to use.

Trim the tops of the cakes to create even layers. Arrange the sliced berries on one cake layer and spread some whipped cream over them. Place the next cake layer on top and repeat the process until all three layers are stacked. Finish by topping the cake with the remaining whipped cream and berries.

Serve the cake with hot coffee or hot chocolate.
You may use buttermilk instead of regular milk; if you do, omit the lemon juice. This will make the cake more moist and tender.
