Thinly slice the beef into large, flat pieces.

Marinate with all the listed ingredients for 20–30 minutes. For extra tenderness, lightly pound the meat with a meat mallet before marinating.

Boil the potato wedges in salted water until just cooked. Avoid overcooking, as the potatoes should not become soft or mushy.

Heat a small cast-iron pan (or a regular pan) and melt 20 g butter.

Sauté the onion wedges, tomato slices, and pâté (if using) until aromatic.

Push the vegetables to one side, add the marinated beef, and sear quickly (about 30–40 seconds per side) to keep it tender.

Push the beef and vegetables aside. Add a little more butter, then crack in the eggs.
