Instructions

Pasta Salad

  • Chop up red bell pepper

  • Chop up yellow bell pepper

  • Defrost Emborg Garden Peas

  • Cut tomatoes

  • In a large mixing bowl, add your vegetables, pasta, Emborg Greek Style Cheese, and mix gently.

  • Divide the portion into four lunch boxes.

Blueberry Muffins

  • Whisk flour, sugar, baking powder, and a little salt in a large bowl

  • Add oil, an egg, and vanilla extract then stir with a fork until blended evenly

  • Mix in the blueberries, divide the batter between muffin cups and bake for 15-20 minutes until the tops are no longer wet and a toothpick inserted into the middle of a muffin comes out with crumbs, not wet batter.

Snacks

  • An easy rule of thumb for a satisfying lunchbox snack is to pair protein-rich food, carb-rich food, and nutritious berries.

  • In this lunch box, we have incorporated a half banana, red grapes and blueberries, but you can adjust and personalise the snack to your kids' favourite snack!
