Lunch Box with Pasta Salad and Blueberry Muffin
- PASTA SALAD:
- 300 g Pasta
- 100 g Emborg Garden Peas
- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 50 g Cherry Tomatoes
- 200 g Emborg Greek Style Cheese
- BLUEBERRY MUFFINS:
- 195 g All-purpose Flour
- 150 g Granulated Sugar
- ¼ tsp Fine Sea Salt
- 2 tsp Baking Powder
- 110 g Emborg Salted Butter
- 1 Egg
- 100 ml Emborg Full Cream Milk
- 1 ½ teaspoons Vanilla Extract
- 200 g Emborg Blueberries
- Red Grapes
Pasta salad is a solid choice that’s totally lunch box approved! It can be made ahead, holds up well in transport, and enjoyed chilled!
You can easily make a big batch of this classic pasta salad on Sunday and add it to both you and your kids’ lunch box throughout the week.
Start by preparing your vegetables:
-Chop up red bell pepper
-Chop up yellow bell pepper
-Defrost Emborg Garden Peas
In a large mixing bowl, add your vegetables, pasta, Emborg Greek Style Cheese, and mix gently.
Divide the portion into four lunch boxes.

Step 1: Whisk flour, sugar, baking powder, and a little salt in a large bowl
Step 2: Add oil, an egg, and vanilla extract then stir with a fork until blended evenly
Step 3: Mix in the blueberries, divide the batter between muffin cups and bake for 15-20 minutes until the tops are no longer wet and a toothpick inserted into the middle of a muffin comes out with crumbs, not wet batter.
