Cheesy vegetable fritters

  • These delicious vegetable fritters is so easy to make. They take only about 10 minutes to make from beginning to end. You can make them and have snacks or lunches for the week in your lunchbox, or perhaps at home for an afternoon snack.

  • Add your flour to a large bowl.

  • In a separate bowl, whisk together milk and eggs. When your eggs and milk is well mixed, add your flour – a little at a time until the dough is combined.

  • Heat up a frypan and add your butter to the pan.

  • When the butter is melted, add tablespoons of mixture to the pan (you can make it any size you want) and cook for 3-4 minutes on each side until they are golden brown.

  • Finally, add them in your lunchbox or enjoy them as a healthy and delicious afternoon snack.

Raspberry Muffins

  • Try these delicious and fluffy raspberry muffins with fresh frozen raspberries! They are so simple to make and a perfect sweet element in a lunchbox!

  • Start by preheating your oven to 200°C degrees and line up a 12-hole muffin tray with paper muffin cases.

  • Then, sift the flour and baking powder into a large bowl, and stir in the sugar. Coarsely grate the chilled butter into the bowl and stir it together with a fork to coat in the flour mixture.

  • In a separate bowl, whisk the milk and egg together and pour it into the flour/butter mixture. Mix lightly with a fork until just combined (tip: be careful not to overmix it – it should still be a little lumpy).

  • Now, gently fold in the raspberries.

  • Spoon the mixture into the muffin cases and bake for 20-25 minutes until the muffins are rising and golden.

  • When they are baked, you can sprinkle with some sugar to make them extra sweet!

  • Now the muffins are ready to be added to your lunchbox - Or enjoyed as a delicious sweet afternoon treat!

Snacks

  • Snacks such as nuts and fruits are high on vitamins and healty fats and always a winner in the lunchbox. In this lunchbox, we have incorporated fresh mango, watermelon, sugar peas, and asparagus that are filled with vitamins.

  • Then we have added a little box of salty crackers for a delicious crispy snack. Remember that you can always adjust and personalise the snack to your kids' favourite snacks!
