Try these delicious and fluffy raspberry muffins with fresh frozen raspberries! They are so simple to make and a perfect sweet element in a lunchbox!
Start by preheating your oven to 200°C degrees and line up a 12-hole muffin tray with paper muffin cases.
Then, sift the flour and baking powder into a large bowl, and stir in the sugar. Coarsely grate the chilled butter into the bowl and stir it together with a fork to coat in the flour mixture.
In a separate bowl, whisk the milk and egg together and pour it into the flour/butter mixture. Mix lightly with a fork until just combined (tip: be careful not to overmix it – it should still be a little lumpy).
Now, gently fold in the raspberries.
Spoon the mixture into the muffin cases and bake for 20-25 minutes until the muffins are rising and golden.
When they are baked, you can sprinkle with some sugar to make them extra sweet!
