Southern Style Chicken and Cheese Fried Rice
Inspired by Southern Vietnamese home cooking, this Southern Style Chicken and Cheese Fried Rice brings together fragrant five-spice–marinated chicken, buttery garlic rice, and a layer of melted cheese. It’s a comforting, modern Vietnamese-style dish that blends familiar local flavours with a rich, indulgent finish.

In a bowl, combine the chicken with fish sauce, soy sauce, sugar, pepper, five-spice powder, garlic, and shallots.

Marinate for at least 20 minutes, or refrigerate overnight for deeper flavour.

Heat a skillet with a little butter. Pan-sear the chicken until golden on both sides and caramelised on the surface. Let it rest briefly.

Sauté the minced garlic in butter or oil until lightly golden and fragrant.

Add the rice and stir-fry until evenly heated and fluffy. Season with salt and pepper.

Transfer the rice to an oven-safe dish or mould and flatten it evenly. Top with the cooked chicken.

Sprinkle with Emborg shredded mozzarella (and Emborg Parmigiano Reggiano, if using).

Bake in a preheated oven at 200°C for 5–6 minutes, or microwave for about 1 minute, until the cheese melts and lightly browns.

Garnish with fried shallots and extra pepper.

Serve hot with fresh vegetables, herbs, pickles, and dipping sauce of your choice.
Add sweetcorn or peas to the rice for colour and texture variation. You can also air-fry the chicken for a crispier, less oily version.
