Stir-fried Glass Noodle with Crab and Cheese

  • After soaking, toss the softened noodles with a little melted butter to prevent sticking.

  • If using a whole crab, steam it and carefully extract the meat.

  • Cut the Emborg Mozzarella into small cubes or short strips and set aside.

Stir-frying

  • In a large pan or wok, heat some butter and sauté the garlic until fragrant.

  • Add the onion and carrot and stir-fry briefly.

  • Gently add the crab meat and stir to combine, taking care not to break it apart.

  • Splash in a little water, then add the glass noodles and stir-fry over high heat. Season with fish sauce, oyster sauce, seasoning powder, sugar, salt, and pepper. Continue tossing until the noodles are evenly coated and cooked through.

Add egg and cheese

  • Push the noodles to one side of the pan. Pour the beaten egg into the empty space and scramble quickly until just set, then mix it into the noodles.

  • Sprinkle the Emborg mozzarella evenly over the noodles while still hot, allowing it to melt slightly. Add extra cheese on top for a stronger flavour and a contrast in texture.

Plating

  • Transfer to a serving plate. Garnish with chopped scallions and coriander. Optionally sprinkle with ground pepper and crispy shallots.

For extra flavouring, you can make sweet and sour sauce (a mix of lime juice, sugar, salt, and a bit of chilli sauce). For a richer taste, you can drizzle in 1 tsp of Emborg Cooking Cream near the end of cooking. For a luxurious twist, top with deep-fried soft-shell crab.
