Vegan Onion Tart with plant-based Cheddar

    • Slice onions and cut puff pastry into a round 30 cm shape.

    • Heat up 1/5 of the vegetable broth in a pan, then add onion and thyme leaf.

    • Now cook down for 15 minutes adding a bit more vegetable broth so the onion don’t burn.

    • Let the onion cool down.

    • Whisk together chick pea flour and the rest of the broth to a thick batter. Add the cooked onion after.

    • Place the puff pastry dough in a 22 cm pie dish lined with baking paper.

    • First, place the plant-based cheddar slices in the bottom of the pie and top with onion mixture. Lastly, fold the sides of the pastry a little over the filling.

    • Bake in the oven for 40 minutes at 200 °C.

    • Once baked, take it out and let cool for a few minutes before serving. Enjoy!
