Easy Creamy Pesto Pasta

In a blender or with an immersion blender, combine fresh basil leaves, cashew nuts (or your choice of nuts), garlic, olive oil, grated parmesan, sea salt, and a few ice cubes. Blend until smooth and emulsified.

Bring a large pot of salted water to the boil. Add the spaghetti and cook according to package instructions until al dente.

Reserve 100 ml of pasta water before draining the pasta. Set aside.

In a large skillet over medium heat, add the prepared pesto.

Pour in the Emborg Cooking Cream and stir to combine.

Add the cooked spaghetti to the skillet and toss to coat the pasta evenly with the creamy pesto sauce.

If the sauce is too thick, add the reserved pasta water a little at a time until the desired consistency is reached.

Plate the creamy pesto pasta. Garnish with additional grated parmesan and a sprig of fresh basil on top. Serve immediately and enjoy!
