Yogurt with Berry Coulis and Granola
An easy and simple dessert, or an addition to the breakfast table
25 mins
Instructions
-
Place the frozen berries, lemon juice and sugar in a saucepan. Cook over medium heat, stirring occasionally, until the berries thaw and the mixture begins to thicken (about 10-15 minutes). Remove from the heat and let it cool. If you prefer a smooth coulis, you can blend the mixture and strain it through a fine-mesh sieve to remove seeds.
-
In glass cups, start by adding a layer of yogurt at the bottom. Add a layer of berry coulis on top of the yogurt. Sprinkle a layer of granola over the berry coulis. Repeat the layers until you reach the top of the cups, finishing with a layer of granola for a nice crunch. Lastly, garnish with fresh blueberries.
-
Serve immediately to enjoy the crunchy texture of the granola, or refrigerate for up to a few hours if you prefer a softer granola texture.
Tips: You can customize this recipe by using your favorite fruits and adjusting the sweetness to your taste. For added texture and flavor, consider adding a drizzle of nut butter on top!
