Cheesy Beef Morcon-don Bleu

Beef Morcon-don Bleu is a famous Filipino dish that is usually served during festive events like Christmas and other celebrations. It's similar to a Chicken Cordon Bleu, except it's made with beef - and this recipe has a cheesy twist!

    Beef

    • Marinate the beef in soy sauce and lemon juice for at least 1 hour.

    • Place the beef on a flat surface and arrange the sausages, pickled cucumber, carrot, Emborg Shredded Mozzarella and egg on one side.

    • Roll the beef, enclosing the fillings, and tie with twine to ensure that the beef will not open up.

    • Heat the cooking oil in a pan.

    • Dredge the rolled beef in flour and fry until the colour of the outer part turns medium brown.

    • Transfer the fried rolled beef to a casserole dish then pour in the beef stock and bring it to a boil.

    • Pour in half of the soy sauce/lemon juice marinade, salt and simmer until the beef is tender (about 2 hours using an ordinary casserole dish or 30 minutes using a pressure cooker).

    Bechamel Sauce

    • Create a roux in a shallow skillet by heating the Emborg Butter with flour.

    • Add the beef stock and the Emborg Full Cream Milk.

    • Add the Emborg Cooking Cream and cook until it thickens. Season with salt and pepper.

    Assemble

    • Optional: Fry the simmered meat for at least 2 minutes until it is crispy on the outside.

    • Remove the strings and slice into serving-sized pieces.

    • Pour the Bechamel sauce on top of the Morcon slices then top with Emborg Shredded Cheddar. Garnish with basil if desired.
