Parmesan Chicken Afritada

    How to cut chicken

    • Place the whole chicken on a flat surface and remove tail. Pull the chicken leg away from the breast and cut through the leg joint.

    • Make a hard chop to separate the thigh and the drumstick and further chop into 4–5 parts. Repeat the same process for the other leg.

    • Bend the wing backwards, exposing the joint, and cut through it. Chop to separate the dingettes and drummettes. Repeat for the other wing.

    • Cut the breast in half through the soft bone. Cut each side of the breast into 4–5 parts then cut the remaining ribcage into 4–5 parts.

    Afritada

    • Marinate the cut chicken in the soy sauce and calamansi for 10–15 minutes.

    • In a pan, heat the oil and fry the carrots and potatoes. Once browned, remove them from the pan and set aside. Using the same pan, sear the marinated chicken to brown.

    • Add the garlic, onion, laurel leaves, tomato sauce and chicken stock. Bring to a simmer and cook for 10 minutes or until the chicken is cooked halfway through.

    • Add the bell peppers then season with the fish sauce and black pepper. Add the Emborg Garden Peas and cook for a further 10 minutes.

    • Add most of the Parmesan, reserving the rest of the cheese for topping, and stir for 1–2 minutes.

    • Transfer to a serving dish and top with the remaining Parmesan. Enjoy!
